cancelling a torrent (either finished or unfinished) closes gui but does not kill process

Sometimes you have to wait a while. How long do you wait till you kill it yourself?

If it's not stopped after 60 seconds, feel free to murder it. Work is being done to fix this bug.

What about the client crashing when closing through the systray icon right-click menu? It has been crashing since many previous versions and was never fixed

Try uninstalling BT, clearing out the BT client folders of all .dlls and reinstalling.
