If there are no seeders, then no one can finish their download, thus no one will be able to create a new seeder . . . so if a Torrent goes to 0 seeders then my download is doomed right?

People can still finish their download even when there are no seeders as long as the peers in the swarm have a good enough distribution of the torrent to be able to finish the rest of the torrent from each other.

If there are super-seed clients on a torrent it will show 0 seeds but download will complete. You can inferr that there is a superseed around if the seeds count stays at 0 but "distributed copies" number slowly increases with time (wait 1/2 hour or so to see differnce in "distributed copies" )
